Last Nights Dinner & Todays Lunch

You have to try this! So easy and so yummy!

Nachos

Fry: Onion, mushrooms and a capsicum (chopped), in a heavy saucepan.


Add a chopped tomato, 2 tablespoons brown sugar, 2 tablespoons vinegar and some Mexican style chilli powder (optional).

Add

1 large tin baked beans

1 tin mexi beans

1 tin refried beans (check out tacho area in supermarket)

Heat through and cook for approx 5-10 minutes then mash with potato masher.

Serve on a bed of corn chips made from pita bread, torn up and sprayed with oil then sprinkled with Cajun seasoning or Italian herbs. Arrange on an oven tray and dry in moderate oven for approx 7 minutes.

Top with sour cream and grated cheese.

NB. One packet of pita bread,(there are 5 large pockets in them), is ample.
